Max Brenner uses two types of filling for the bonbons:
- Ganache/Truffle filling: This filling is prepared in the French chocolate style. It is made with a large quantity of chocolate cooked with butter and crème fraiche, which makes the consistency softer and smoother.
- Praline filling: This filling is made out of a mixture of walnuts or almonds cooked in and coated with caramel in a special process and then ground into a fine paste. A praline filling is dense and airless, with the texture of a spread or paste and dissolves readily.
